Arancini (or arancine) are one of the most controversial dishes of Sicilian cuisine

Arancino is a ball of flavored rice, breaded and then fried, with a diameter of 8-10 cm, stuffed with different ingredients and sauces typical of Sicilian cuisine.

We offer a vegetarian menu or the classic meat and fish menu with three variants per menu.

We will cook and eat together and you will learn both the tricks and the history of the typical dishes of Sicilian cuisine.

“Scacce”, the sicilian for “Focacce” is a typical baked product of the province of Ragusa and a dish of the popular gastronomic tradition.

It consists of a focaccia with different types of toppings placed between two or more layers of bread-like dough. The scaccia is consumed mainly during the Christmas period, while the breaded, which has a round shape, is consumed during the Easter period.

Pastiere di carne and Tomasini di Ricotta will be offered in this class because they are the most iconic representation of typical backed products of Scicli and Modica.

There are three dishes that we have chosen for you which are linked to this extraordinary vegetable with a white pulp, tasty fried and golden brown, which is intrinsically linked to the Sicilian gastronomic heritage.

We have chosen for you a complete menu which includes:
an appetizer, “La Caponata”, a mixture of vegetables and greens seasoned with sweet and sour sauce,
followed by a first course, “Pasta alla Norma” one of the most famous dishes from Catania known all over the world,
and finally we close with a great classic “La Parmigiana”, a very delicious aubergine lasagna.

They are made by filling a dough pocket with a variety of ingredients such as tomato sauce, mozzarella cheese, ham, or mushrooms and many more, and then deep-frying it until it is crispy and golden brown. It is often served as a street food snack in Sicily, and it is a popular choice among locals and tourists alike.

We will cook 3 types of pasta, the pasta will be hand-rolled according to traditional methods and with the use of ancient flours.

The “Busiate” a typical pasta from Trapani with tomato pesto, garlic, almonds and cheese;

Ravioli filled with ricotta cheese and aubergine sauce;

Spaghetti alla Carrettiera, a recipe linked to the Valle del Platani area which involves a condiment based on oil, raw garlic, pepper and grated pecorino cheese, sun dried tomatoes and much more;

This Menu might vary according to seasonality.

Cannoli di ricotta

The essence of Sicily enclosed in a single dessert

The Sicilian Cannoli, are a traditional sweet typical of Sicilian pastry. These are fried waffles in the shape of a tube precisely “Cannolo”.

The wafers are then stuffed with ricotta cream and decorated with powdered sugar and chopped pistachios or almonds.
The cannolo encloses the heart of the Sicilian culinary tradition and is one of the most famous Sicilian sweets in the world!
